At the Food Material Engineering Laboratory, we are interested in how molecular and colloidal structures determine the functionality of food and biomaterial systems. Also, we seek to understand the fundamental structure–function relationships.
Our work includes the development of emulsion, gel-based alternative protein and fat systems, as well as microneedle platforms and carbon nanodot-based materials for bioactive delivery and therapeutic purposes.
Ultimately, we aim to connect fundamental material science with practical applications in sustainable foods and translational biomaterials.
